Apple Cider brine – Pimp your roast chicken now!
Sun is out and the weather is hot! Time to take a refreshing bath. Since the meat we eat should be treated well I let my next project join in the fun. After all who wouldn’t want a bath of apple cider and beer? The apple cider brine is excellent for roast chicken and that’s exactly what I made with it! Find the recipe over here!

Apple cider brine
For this brine I used a combo of regular blond ale and the Blind Pig smoked Apple cider. When I drank this cider a while ago I instantly had in mind to do something with it for a BBQ session. For me the taste was a tad to sweet for drinking. I actually prefer the bourbon and blueberry flavored one for that. Yet for a brine it has a lot of pleasant notes. The honey, apple and smokey touch fit the brine and the beer brings a subtle bitter note. I also used some cider vinegar to enhance the apple taste and bring some acidity. Besides some green herbs I also added hot sauce for some spicy notes. And there you go the Blind Pigs Apple cider brine is ready! Time for the chicky to get a bath.

- 500 ml Blind Pig Smoked Apple Cider
- 500 ml Blond Ale
- 1/3 cup granulated sugar
- 1 Tbsp Sriracha
- 1 Tbsp Peri Peri Sauce
- 4 bay leaves
- 2 twigs rosemary
- 1/3 cup cider vinegar
- 1/3 cup kosher salt
Take a large bowl: add the blind pig smoked apple cider, blond ale, sriracha, peri peri sauce, cider vinegar, salt and sugar. Stir through until all flavors are combined and the salt and sugare are dissolved.
Add the bay leaves and rosemary. Put the chicken in the bowl and add water untill the chicken is covered in brine.
