Belgians have a strong connection to sauces comparable to the love among BBQ addicts for a decent sauce. Like I mentioned before I only add sauce as a subtle ingredient. To me the taste of meat should be the first taste you get when eating quality pieces. The sauce is there to support or compliment the meat. While preparing a piece of Wild Boar that’s what I aimed for. A BBQ sauce that supports the delicious complex taste of wild game. Hence the “Game Changer BBQ sauce” was born. WILD Game

The term game refers to animals living a free life in the forrest. Think of deer, wild boar, duck, … These days hunters go out hunting them and hope ending up with a delicious treasure. Our job is bringing honour to both the hunters and the animals that died to become our food. Some of you might know fall is my favorite season. Eating a piece of wild game is one of the reasons I love this season. Since the animals live their lifes out in the open they feed themselves on all natural ingredients and tend to run a lot. This causing a delicious deep and strong tasting piece of meat. Yet often a lot leaner than farmed animals. Not bad for our health but a bit more challenging to cook decently. After all you don’t want to end up with a dry piece of meat or overrule it’s taste by using the wrong sauce.

Preparing Game

That’s exactly the reason why I created this Game Changer BBQ sauce. One of these days I’ll be sharing you an awesome project I did lately. Wild Boar Pulled pork made of a piece of Wild boar roast I got from Carmans E&L to create a recipe with. Since I love a bit of a challenge it feels like christmas presents were given early this year. It was my first time making Wild Boar on the Q so I was a bit afraid it would dry out. To prevent this I brine the Pork roast and prepare it low and slow on the smoker. I was doubting between keeping it traditional rosé or “overcook” it in order to make pulled pork. Yet “overcooking it” could lead to a dryer piece of meat. Nevertheless I picked the last option and made a BBQ sauce with some traditional flavors to be served with the Wild Boar pulled pork. A hearty piece of game compliments well with a sweeter sauce like the “Game changer BBQ sauce”

GAME CHANGER BBQ SAUCE

When eating Game I’m fond of the combination with port sauce, hot apples and cranberry jam. A classic but barely to beatable. Combining these ingredients sounds like a win win to me. These ingredients bring a lot of natural taste. Using a lot of powerful spices might overrule the delicate taste of the meat. Hence I limit the ingredients for this sauce. The berries bring a natural acidity with a touch of sweetness, the port brings a slightly herby sweetness. By adding honey and cherry vinegar I tried to enforce these notes. A pinch of chili and mustard powder bring a very subtle layer of power and bitterness. And that’s it! Gently bring these to a boiling point and reduce the sauce and you’re ready. Serve the Game changer BBQ sauce hot with your preferred piece of game.

RESULT:

The Game changer BBQ sauce was a big hit. It did exactly what I had in mind! My wife who isn’t fond of sauces even took some extra. Hence I had to make some more. On a regular sunday I had the feeling I was eating a festive meal (even without the hot apples). I advice you to keep an eye on the blog. One of these days I will post a “Pulled Wild Boar” recipe you don’t want to miss. It might bring you a magnificent project for the holidays with this sauce. Wild game and port sauce with a hot apple and cranberries. The perfect christmas meal! I totally agree but we aim higher! Wild game on the BBQ with a supporting Game changer BBQ sauce. A sweet and sour sauce made from porto, cran- and blackberries that will bring some balls to your party project.

Ingredients
  • 1 cup blackberries
  • 1 cup cranberries
  • 6 Tbsp. honey
  • 2 Tbsp sherry vinegar
  • 1/2 tsp mustard powder
  • 1/2 tsp chili powder
  • 2/3 cup red port
  • salt and pepper at taste
Instructions
  1. Making a sauce like this isn't hard. Add all ingredients to a sauce pan and gently bring to a boiling point. 
    This is my favorite one! I got it for Christmas a couple of years ago.

  2. Let simmer until the sauce is reduced to the preferred thickness. 

  3. Serve hot with a quality piece of game from the BBQ.
