Grilled Zucchini Soup
Some posts ago I shared my love for autumn. I love how natures colours start to change. Especially when summer’s trying to get it’s last grip at the weather. The gallons of rain have been chased away by Indian summer. Soft temperatures, nice sunshine and most of all: there are still a lot of zucchini growing in my garden!
There’s an easy and tasteful way to fully enjoy these delights! First of all grilling them with some oil, salt and pepper. Combine them with some baked potatoes and whatever meat you want to eat. Easy but my personal favorite! Since I love cooking with zucchini you can expect more posts soon! Once you start grilling you can also make some pickled grilled zucchini and soup! Grilled zucchini soup is actually one of the few soups I don’t screw up. Strangely making soup doesn’t seem to fit me well…
Grilled Zucchini Soup Recipe:
- 2 zucchini
- 1 big onion
- 3 cloves of fresh garlic
- Olive oil
- ¾ cup chicken broth
- Salt and pepper
Cut the zucchini in large pieces and grill them over a hot fire. Meanwhile cut the onion in big pieces and crush the fresh garlic.
Place a cast iron pot over a medium fire. Pour some olive oil in the pot and simmer the onion and garlic.
Fry the onion until translucent. Then add the grilled zucchini and let it simmer for about 10 min.
Add the chicken broth and let it cook for another half hour above medium fire.
Mix the soup and enjoy!
I think this recipe proves it doesn’t need to be complicated to serve a tasteful BBQ dish! Grilling the zucchini just adds an extra flavorous dimension, better than what ingredient you can come up with in my opinion!
