Salade van rode biet met citrusvruchten

In the section delicious and surprising sides I’ll share this Citrus flavored Beetroot salad. With the earthy touch of winter this beetroot salad works perfect with a piece of wild game. The Guinea Fowl I shared last week for instance! But don’t worry, the citrus flavors in this recipe will balance it all out. With some additional nuts and the salty touch of Feta this salad is allready a complete meal on it’s own. But hey… We do love a piece of meat after all… Next time I’ll try to roast the Beetroots in between the coals for an extra smoky touch! So what do you think? The taste of winter is a blessing! With the earthy tones of the beetroot balanced with the citrus and mint, this beetroot salad will do great with a piece of wildgame! Go surprise your guests with this tasteful salad. Have fun!
- 500 gr. beetroot
- 1/2 red onion
- zeste from 1 orange and half of it’s juice
- 1 lime zeste and juice
- 1 handful of mint
- 1 pinch of cinnamon
- salt and pepper at taste
- 1 Tbsp Honey
- 1 sour apple
- 1 handful mixed nuts
- feta at taste

Dice the beetroot in small cubes and slice the red onion in thin strips.

Mix the honey with the lime and orange juice, salt and pepper at taste, a pinch of cinnamon and half of the thinly chopped fresh mint.

Stir the beetroot under the marinade and put aside for at least 4 hours.

Bake the mixed nuts in a hot pan.

Slice the sour apple in julienne and mix under the beetroot salad right before serving.

Stir in the mixed nuts, zest of one lime and half of the orange. Toss in the crumbled Feta cheese.
