Superhero Lasagna – full of grilled vegetables
First week of school for the kids is allready behind the back! Time to spoil them with their favorite meal. This superhero lasagna is what they look forward too after a long day paying attention. By the way, who doesn’t love lasagna? This version is packed with fresh grilled vegetables. There’s even cauliflower in the cheesesauce! So without knowing your little ones will be stuffed with vitamins. I bet their plate will be empty real fast!

Lasagna on the BBQ?
It might sound strange to make a lasagna on the BBQ. Especially for those who aren’t really familiar with BBQ it might be a bit of a weird idea. Yet it’s not that special! From the moment you have a lid on your Q, you can actually use it like a woodfired oven. This broadens the range of possibilities gigantically. By using the lid and guiding the airflow you can basically let the heath circulate around your meal. So from now on you’ll be possible to give your go to casserole recipe a BBQ twist. And while you’ve fired up the BBQ you might as well grill the vegetables usesd! Only thing you need to look out for is the usage of smokewood. It might overrule the taste of your meal and that’s not what we want. So I don’t use it for recipes like this.
Like we all know, you don’t become a superhero easily! It needs a combination of condition, intelligence, imagination and powerful values! So as a parrent we have the task to stimulate these elements to help our kids reach their goals. My youngest boy is dreaming of a life as Tommy “The Green Power Ranger”. Yes I’ve told them about this nostalgic series (#goodjobfather). And what better way to help them than serving a delicious meal packed with vegetables to become big and strong. This lasagna is stuffed with grilled vegetables, there’s even a complete cauliflower used for the cheesesauce. It doesn’t even taste that different from the cheese sauce I used to make! Hiding vegetables in meals is often the secret to kidsproof recipes. Maybe that’s why most of those kiddo’s love lasagna? Luckily for me I don’t often need to hide them. Both my boys have a healthy interest in food. Especially my oldest seems to have a talent for tasting and differentiating ingredients! This might be his superpower!
Cauliflower cheese sauce
I know most of you might be a bit like me: “somewhat skeptical about those healthy recipes that aught to be as delicious as you’re used to”. Yet I’m open minded and still like to test some of these recipes. In this case it’s a big win. It’s not only somewhat healthier (there’s still cheese in it like it should!!) but it’s also a bit easier to make; All you need to do is boil the hell out of the cauliflower and mix it with some of the broth, cheese and spices. And the taste? Not even that far away from my regular sauce. So what do we have to lose? The kids don’t even notice a difference! By the time I was able to give myself a piece of this superhero lasagna their plate was almost empty…

Luckily this sauce is one of them. So what better way for this part of the contest than making the favorite meal of my kids? You want the best for your kids! Those little monsters want to become a superhero as fast as they can! It’s our job to help them with this process! One of the things we do is bring them some nice fresh meals with a bunchload of vegetables. They won’t even notice they’re eating them!
- 1 jar Heinz Bolognese Sauce
- 1 handful pine nuts
- Fresh Basil
- 5 sheets lasagna
- olive oil
- 1/2 tsp cumin powder
- 1/2 tsp paprika powder
- 1/2 tsp anis powder
- 2 red onions
- 2 stems green celery
- 2 carrots
- 2 sweet bell peppers
- 1 zucchini
- 1 eggplant
- 1 cauliflower
- 100 ml chicken broth
- 100 gr. grated cheese
- 50 gr. grated cheese for the crust
- nutmeg at taste
- salt and pepper at taste
Prepare your BBQ for a direct cooking session on medium heat (about 200°C/400°F).
While you wait for the BBQ to get the right temperature, slice the zucchini and eggplant about 0.5cm thick. Sprinkle them with salt and olive oil. Put aside for ten minutes until you see some drops on top of the vegetables.
Put a cast iron skillet on the fire and add the olive oil with the spices. Fry the spices for 2 minutes to set free the flavors.
Meanwhile chop the onion, celery and carrots and add them to the skillet until they’re done.
While baking you can use the left over space to grill your sweet bell pepper, eggplant and zucchini.
Put the vegetables on the side until you start composing the Lasagna.
Start by cooking your cauliflower for 20 minutes in vegetable broth. The cauliflower needs to be past done and nearly fall apart. If you’d like some extra BBQ flavor try removing the cauliflower from the boiling water about 5 minutes earlier and put on the grill until it’s nearly falling apart.
Add the overcooked cauliflower to a blender with 100 ml. vegetable broth and 100 gr. grated cheese. Add some salt, pepper and nutmeg at taste. Mix thoroughly and taste. Add more ingredients to your own preference. If the sauce is too firm you can add some more vegetable broth.
Start by adding some Heinz Seriously good Bolognesesaus to an oven tray and add the onion, celery and carrot mixture. Put a couple slices of grilled eggplant on top.
Add a sheet of lasagna and put the grilled zucchini on top of it. Pour some of the cauliflower cheese sauce on top and finally the grilled sweet bell pepper.
Add another sheet of lasagna and start over until your oven tray is filled. Sprinkle some freshly grated cheese on top of it to end up with a nice crust.
Put the lasagna in your BBQ on an indirect heat source for about 20/25 minutes at 200°C/400°F). Close the lid to get a nice golden brown crust.
While the lasagna is getting a tan, bake some pine nuts to sprinkle on top of the superhero lasagna together with some fresh leaves of basil.
