Miso marinated Asian chicken hearts
Chicken hearts, cold smoker, Coldsmoked, Grilled, marinated, miso, pellet grill, Traeger, white miso
black rice wine
sweet soy sauce
thumb grated ginger
lime zest and juice
nanami togarashi at taste
kaffir lime zest
(can be replaced by regular lime if you can't find kaffir).
spring onions at taste
Mix all marinade ingredients thoroughly. Taste and add more lime juice when desired (depending on the sice of the lime)
Skew the chicken hearts about 3 per skewer and marinate them for at about 6 hrs.
Prepare your BBQ for a session on direct heat (+-220-250°C)
Remove the biggest parts of the marinade but make sure a thin layer of taste is left on the skewers. Place them on the hot grill.
Grill the skewers for about 2/3 minutes on each side until they are slightly charred and golden brown.
Plate the skewers and sprinkle some Nanami Togarashi (assorted chili), kaffir lime juice and spring onions at taste over the skewers.
