Apple Cider Brine

Ingredients

  • 500 ml Blind Pig Smoked Apple Cider
  • 500 ml Blond Ale
  • 1/3 cup granulated sugar
  • 1 Tbsp Sriracha
  • 1 Tbsp Peri Peri Sauce
  • 4 bay leaves
  • 2 twigs rosemary
  • 1/3 cup cider vinegar
  • 1/3 cup kosher salt

Instructions

  • Take a large bowl: add the blind pig smoked apple cider, blond ale, sriracha, peri peri sauce, cider vinegar, salt and sugar. Stir through until all flavors are combined and the salt and sugare are dissolved.
  • Add the bay leaves and rosemary. Put the chicken in the bowl and add water untill the chicken is covered in brine.
