English Breakfast Hotdog
Breakfast is the most important meal of the day! Yet we often get stuck in routines! This English breakfast hotdog inspired by a Francis Mallmann recipe is here to make a difference! Bacon and eggs, sausage and burned tomatoes! If this isn't a great start of your day I don't know what will be!
Servings 4 Hotdogs
Ingredients
- 4 sandwiches
- 4 Thin sausages Chicken sausages are used here!
- 4 slices bacon
- 4 eggs
- 12 cherry tomatoes
- 1 cup strong coffee
- salt and pepper at taste
- Mayonnaise at taste
- Ketchup at taste
Instructions
- Heat your BBQ for a direct cooking session at 200°C. Preheat your cast iron plate until it's hot.
- While the fire is getting hot, put the bacon in a cup of strong coffee and let it rest for about 10 minutes.
- Halve the cherry tomatoes
- Stir the eggs and flavour with salt and pepper
- Pour some oil on the cast Iron plate en put the tomatoes on top of it flat side down. Sear them on the hot plate. First they will stick but they will release themself when done! Don't worry if they're black, this is what you need for optimal flavor!
- Grill the coffee dyed bacon besides the tomato and grill the sausages on the grid. Depending on the thickness the time for this might differ.
- When done remove the bacon and tomatoes from the plate and put aside. Pour the beaten eggs on the grill. They will be done immediately.
- Baste the sandwiches with a thin layer of oil and toast them on top of the coals.
Composing the hotdog
- Take a toasted sandwich and put a piece of the omelet and bacon and put it in between the sandwich. Put a sausage and the blackened tomatoes on top of it and finish with ketchup at mayo at taste!

Notes
The ketchup will support and complement the sweet taste of the blackened tomato while the mayo will support the creamy notes necessary for the eggs! But use them in a subtle way! They're not meant to cover the other flavors!
