Marinated mushrooms might be the underdog of the appetizers. You don't see it very often but it's one of my favorites. So why not make them in a grilled version and try to bring them into the daylight! They're easy to make and super delicious! Something you can proudly serve at your next party if they last long enough ...

Ingredients
For the Marinade
1tbspextra virgin olive oil
1jalapeno pepper
3leavessage
1/4cupsushi vinegar(buy at link in recipe)
1/4cupcider vinegar
1/4cupwater
1teaspoonsalt
For the Mushrooms
250grParis mushroomsor other mushrooms you desire
2tbspfish sauce
2tbspsushi vinegar
Instructions
Add vegetable oil to a sauce pan and toss in a twig of rosemary, sage and a sliced jalapeno pepper with seeds. Cook for about 2 minutes to release the flavors.
Pour in the sushi vinegar, cider vinegar and water and bring to boil. Once the mixture is boiling set aside to cool down.
Clean your mushrooms mushrooms:When using small mushrooms leave them as a whole. In case of big mushrooms cut them in smaller pieces.
Pour 2 tbsp sushi vinegar and 2 tbsp fish sauce over the mushrooms before grilling them! This will give them a nice flavor.
Add smokewood to your fire (I used vinewood) and smoke/grill the mushrooms untill they are golden brown and soft.
Put the grilled mushrooms in a fitting jar and add the cooled marinade. Shake it thouroughly so the flavors can combine and refrigerate.
Serve as appetizer or side! I bet you they will be gone fast!
