Peach liquor carrots

Carrots can be made in many different ways! I prefer them slowly baked in a cast iron pan! Some smokey touches from a firewood and a range of quality spices makes it even better! These peach liquor carrots are a sidedish feast! Perfect with a piece of red meat or chicken.

Ingredients

  • 500 gr. Carrots
  • 1 tbsp Olive oil
  • 1/2 tsp Cumin powder
  • 1/2 tsp Ginger powder
  • 1/2 tsp Curry powder
  • Salt and Pepper at taste
  • 1/3 cup Peach Liquor
  • Parsley at taste

Instructions

  • Add some olive oil to a cast iron pan and toss in the spices. Let simmer for a couple of minutes so their flavor can develop well! 
  • Remove the peel of the carrots and quarter them endlong. 
  • Add the carrots to the skillet (cast iron pan) and let simmer for about 10 min.
  • Add the peach liquor to the skillet and put back in the BBQ for a half hour at 150°C on a direct heat source. Stir halfway to prevent the carrots from  burning and get a nice caramellisation on more carrots. 
  • Test for doneness and taste. Add some more spices when desired and finish with salt, pepper and parsley. 

Serve with a delicious piece of chicken or red meat! Have a nice meal!
