Rum Glazed Chicken hearts with Doritos Crumble

Halloween is coming! Time to see where the real daredevils are. Do you dare these bloody chicken hearts? With a crumble of doritos for some extra crunch. Oh and do you want to make it totally exciting? Then add some extra Firfly hot sauce to half of the sauce for a Russian Roulette 2.0. Lots of creepy fun!

Ingredients

  • 250 gr. Chicken hearts
  • 2 tbsp rub

For the Crumble

  • 1 handful Sweet Chili Doritos
  • Bamix blender

For the rub

  • 2 Tbsp Paprika Powder
  • 2 Tbsp crystal sugar
  • 1 Tbsp salt
  • 1/2 Tbsp ginger powder

For the bloody BBQ Sauce

  • 150 ml water
  • 50 ml brown rum
  • 50 gr. granulated sugar
  • 3 Tbsp ketchup
  • 2 tbsp blueberry syrup
  • 1 tbsp cider vinegar
  • juice of half a lime
  • Firefly Reavers Carolina Reaper to taste

Instructions

  • Mix the ingredients for the rub well and break any lumps with your fingers.
  • Season the chicken hearts to taste with the spice rub.
  • Prepare the BBQ for a high temperature session and preheat the skillet. Meanwhile you can make the sauce.

For the bloody sauce and crumble

  • Add all the ingredients to a saucepan and let the sauce reduce to a syrupy texture. Taste and season with lime juice and cider vinegar.
  • For the crumble: Place a handful of Doritos in the mincer and chop them finely until you get a coarse sandy texture (not fine otherwise it will lose its crispness). If you want to be playful you can add the Firefly Hot sauce to half of the sauce to make half of the chicken hearts extra spicy. This increases the tension among the daredevils. #russianroulette2.0

Finish chicken hearts.

  • Fry the chicken hearts briefly and vigorously in the skillet until they are nicely colored.
  • Add the sauce and caramelize the chicken hearts in the bloody sauce. As soon as the sauce sticks around the chicken hearts you can remove them from the BBQ. Stick some skewers through the hearts and place them in the Doritos crumble.
