1Pizza dough
1handful grated mozzarella cheese
1handfulgrated parmesan
10slicesGuanciale in case of emergency to be replaced by Bacon rich in fat
Fresh Rosemary
Fresh sage and/or basil
Pepperat taste
Arugula for traditional purposes to be bought and forgotten...

Instructions
Prepare your BBQ for an indirect session at very high heat (aim for 300°C to make sure the fat of the guanciale will melt over your pizza)
While the BBQ is gaining temperature sprinkle some grated mozzarella cheese and parmesan on top of the pizza dough.
Cut thin slices of the Guanciale and put it on the cheese on your pizza.
Sprinkle with thinly chopped rosemary and basil and finish with pepper at taste.
Add the slices of mushroom and bake the pizza on high heat on your pizza stone. (Some extra semola or flower can be useful to prevent the pizza from sticking to the plate. )
Bake the Fat Bastard pizza on blazing hot temperatures. This way the toppings and crust will be done in a couple of minutes.
Forget the arugula and use it to make a delicious pesto the next day!
