You want the best for your kids! Those little monsters want to become a superhero as fast as they can! It's our job to help them with this process! One of the things we do is bring them some nice fresh meals with a bunchload of vegetables. They won't even notice they're eating them!
Prepare your BBQ for a direct cooking session on medium heat (about 200°C/400°F).
While you wait for the BBQ to get the right temperature, slice the zucchini and eggplant about 0.5cm thick. Sprinkle them with salt and olive oil. Put aside for ten minutes until you see some drops on top of the vegetables.
Put a cast iron skillet on the fire and add the olive oil with the spices. Fry the spices for 2 minutes to set free the flavors.
Meanwhile chop the onion, celery and carrots and add them to the skillet until they're done.
While baking you can use the left over space to grill your sweet bell pepper, eggplant and zucchini.
Put the vegetables on the side until you start composing the Lasagna.
Cauliflower cheese sauce
Start by cooking your cauliflower for 20 minutes in vegetable broth. The cauliflower needs to be past done and nearly fall apart. If you'd like some extra BBQ flavor try removing the cauliflower from the boiling water about 5 minutes earlier and put on the grill until it's nearly falling apart.
Add the overcooked cauliflower to a blender with 100 ml. vegetable broth and 100 gr. grated cheese. Add some salt, pepper and nutmeg at taste. Mix thoroughly and taste. Add more ingredients to your own preference. If the sauce is too firm you can add some more vegetable broth.
Composing the superhero lasagna
Start by adding some Heinz Seriously good Bolognesesaus to an oven tray and add the onion, celery and carrot mixture. Put a couple slices of grilled eggplant on top.
Add a sheet of lasagna and put the grilled zucchini on top of it. Pour some of the cauliflower cheese sauce on top and finally the grilled sweet bell pepper.
Add another sheet of lasagna and start over until your oven tray is filled. Sprinkle some freshly grated cheese on top of it to end up with a nice crust.
Finish the lasagna
Put the lasagna in your BBQ on an indirect heat source for about 20/25 minutes at 200°C/400°F). Close the lid to get a nice golden brown crust.
While the lasagna is getting a tan, bake some pine nuts to sprinkle on top of the superhero lasagna together with some fresh leaves of basil.
