Daring Disney Legs – with spicy mango sauce

When I think about Disney I think about Walt, making me think about Breaking Bad and doing daring things... No drugs sir but some booze on the other hand... These Disney Inspired Turkey Drumsticks are my own twist on a Disney classic. Have fun with these sweet and spicy "Daring Disney Legs".

Ingredients

  • 2 Turkey Drumsticks
  • 5 Tbsp Daring Disney Sauce recipe in instructions below

For the brine

  • 150 gr salt
  • 2 l water
  • 1 el oregano
  • 1 el thyme
  • 1 el paprika powder
  • 1 thumb grated ginger

Instructions

Brining the Drumsticks

  • Mix all brine ingredients until the salt is absorbed by the water.
  • Put the drumsticks in the brine for at least 4 hours (preferably overnight).
  • Remove the brine and pat dry the Turkey Legs. Let rest for another hour uncovered to dry the skin.

Smoking time

  • Meanwhile prepare your BBQ for an indirect session at low heat (+-75°C-100°C). When using another type of BBQ than the Pellet smoker you need to add a couple of chunks cherry wood.
  • Smoke the Daring Disney Legs for about 2 hrs. until they get a nice red colour.
  • Baste the disney legs with the Daring Disney sauce after about an hour. And let them smoke further. This way the sauce will nicely stick to the drumsticks.
  • Raise the temperature of your grill to 150°C and smokeroast the Daring Disney Legs until you reach the desired internal temperature from 85°C bekomt. Glaze every once a while with sauce to prevent the sugars from burning.
