Go get those napkins! The sound of this Fat Bastard Pizza might make you drool all over your screen! Build with a nice amount of cheese, this Pizza Bianca gets it’s power from the magnificent Guanciale and it’s combination with the sage, basil and rosemary! Why? Just because the delicious juicy fat from the guanciale will melt over your pizza giving it some meaty royal taste! So good you will forget about the vegetables that were supposed to be added afterwards… This pizza could have been called “who needs arrugola anyway Pizza”. But somehow Fat Bastard Pizza sounds better. Have fun with this meal! Curious to see your creations!

With some extra fresh herbs, parmesan and mozzarella to boost the flavors! You want to make a traditional fat bastard pizza? Buy the Arugula and forget to use it in the end! Servings: 1 pizza
  • 1 Pizza dough
  • 1 handful grated mozzarella cheese
  • 1 handful grated parmesan
  • 10 slices Guanciale in case of emergency to be replaced by Bacon rich in fat
  • Fresh Rosemary
  • Fresh sage and/or basil
  • Pepper at taste
  • Arugula for traditional purposes to be bought and forgotten…
  • 9 slices of mushroom don't go wild on the veggies 🙂
  1. Prepare your BBQ for an indirect session at very high heat (aim for 300°C to make sure the fat of the guanciale will melt over your pizza)

  2. Put the platesetter in the BBQ and your Pizza stone on the grid.

  3. While the BBQ is gaining temperature sprinkle some grated mozzarella cheese and parmesan on top of the pizza dough.

  4. Cut thin slices of the Guanciale and put it on the cheese on your pizza.

  5. Sprinkle with thinly chopped rosemary and basil and finish with pepper at taste.

  6. Add the slices of mushroom and bake the pizza on high heat on your pizza stone. (Some extra semola or flower can be useful to prevent the pizza from sticking to the plate. )

  7. Bake the Fat Bastard pizza on blazing hot temperatures. This way the toppings and crust will be done in a couple of minutes.

  8. Forget the arugula and use it to make a delicious pesto the next day!
