Spicy Lee’s BBQ sauce
Like mentioned in the introduction to this post you can expect a BBQ sauce with a complex flavor pattern. However the Spicy Lee’s BBQ sauce has been made with a classic American style BBQ sauce base (think of the coke and ketchup) it’s flavored with some of the best Asian ingrediënts. Think about the soy sauce for the a punch of salt, Mirin seasoning for some extra sweetness, Sriracha for a subtle touch of garlic. But there’s more. The Kaffir lime leaves bring a nice refreshing touch while the cinnamon and star anise create a warming flavor profile that brings balance. Moreover the star anise goes perfect with pork meat, but we’ve tasted it on lamb too and in my opinion it was a match made in heaven. So you might want to try more than these options. I’m not sure but I guess chicken might work well too. That might be an option for a next project.

Spicy Lee's BBQ Sauce
Ingredients
- 500 gr ketchup
- 500 gr sweet BBQ sauce
- 500 gr Coke (for drinking of course)
- 125 gr soy sauce
- 1 tbsp curry paste
- 1 tsp Sriracha
- 2 dl White vinegar
- 2 dl Mirin
- 5 sticks cinnamon
- 5 pieces star anise
- 5 lime leaves
Instructions
- Mix all ingredients and gently heat for 30 minutes to infuse the sauce with the spices and reduce to the desired thickness.
