Geroosterde sardientjes met Marceau le Blanc
The sun is out again! Can you feel it coming? That urge to go out and light a fire? No need for the long runs! The lust for goods is bigger than your patience! I totally understand you on this one! These grilled sardines will help your urge for fire roasted food! Serve it with a delicious white wine to kick of you summer party with style! Slipping the sardines in my mouth I suddenly felt like I was eating out in the South of Europe! - 100 gr. sardines
- 3 tbsp oil
- 1 tsp hazelnut oil
- 1/2 handful of lemon verbena
- 1/2 handful of cilantro
- 1 tsp thinly chopped chili peppers
- zeste of a half lemon
- lemon juice at taste
- salt and pepper at taste
Clean the sardines by gently stroking them from the tail to the head to remove it’s small scales. Make a thin cut in the belly and remove the intestins. Rinse under clean water and put aside in a bowl to marinate.
Mix the oils, lemon verbena, cilantro, lemon zeste and peppers and pour over the cleanded sardines.
Put the marinated sardines in the fridge for an hour. Meanwhile start the grill on high heat.
Grill the sardines about two minutes each side. Watch out they don’t stick on your grill.
Put the grilled sardines in a tray and sprinkle with lemon juice, salt and pepper at taste. Add some fresh lemon zeste at taste for some bright colours and flavor pops.
