Some time ago I asked what you would like to see more on this blog! Surprisingly a lot of you answered “sidedishes”. So far I focussed on the meat and fish I prepare due to time restrictions. Time for a chance! With these peach liquor carrots I bring you a surprising side to serve that can beat up against a beautiful piece of meat/chicken! Pour yourself a cocktail and save some of the liquor for this side! You won’t regret!

Peach liquor carrots
I love carrots but to be honest it took me a while to get them like I wanted! Somehow they would never get the lovely sweet and full flavor I remembered from home! I’ve tried quite some recipes using, honey, sugar, fruit juices, … Mostly ok but rarely good enough! Until I was making a cocktail in an experimenting mood and tried to add the peach liquor to my carrots who were simmering in my skillet on the BBQ. The peach liquor carrots were born!
I guess these experiments are the essential part of cooking! The result of those experiments can be quite surprising. I hope you see the recipes I bring as a source of inspiration to go out and experiment yourself! Just because it’s fun and you learn to know what you’re doing (btw: failing is a part of the learning process so don’t be scared). Hope to see some of your creations on social media soon! Peach liquor carrots
Ingredients
- 500 gr. Carrots
- 1 tbsp Olive oil
- 1/2 tsp Cumin powder
- 1/2 tsp Ginger powder
- 1/2 tsp Curry powder
- Salt and Pepper at taste
- 1/3 cup Peach Liquor
- Parsley at taste
Instructions
- Add some olive oil to a cast iron pan and toss in the spices. Let simmer for a couple of minutes so their flavor can develop well!
- Remove the peel of the carrots and quarter them endlong.
- Add the carrots to the skillet (cast iron pan) and let simmer for about 10 min.
- Add the peach liquor to the skillet and put back in the BBQ for a half hour at 150°C on a direct heat source. Stir halfway to prevent the carrots from burning and get a nice caramellisation on more carrots.
- Test for doneness and taste. Add some more spices when desired and finish with salt, pepper and parsley.
Serve with a delicious piece of chicken or red meat! Have a nice meal!
