Are you fond of those from nose-to-tail recipes? Hell yeah… You should be! Or at least you need to try them. These grilled chicken hearts are a perfect introduction into the world of organ food. They are pretty easy to make, done in no time […]
I have to admit I’m sceptic about most commercial rubs. Quite often they aren’t as special as you would expect them to be given their price. I understand they’re easy on those moments we lack the time to make things from scratch. Yet I believe […]
Health experts say we need to eat more salads. Nobody said it had to be a boring one. So why not pimping up a traditional Irish salad with some grilled ingredients. Grilled salad hearts for instance are a big win!! They combine well with some hints of coffee which lead me to the final result: “A grilled Irish Rib-Eye salad” with a Don Marco’s Mafia coffee rubbed aged irish rib-eye as the center piece of this salad.
Born in the flemish part of Belgium I need to share this grilled version of the local classic meal: “Asparagus a la Flamande”. It’s a simple yet delicious recipe that has the asparagus as a star ingrediënt topped with mashed eggs. Instead of using clarified […]
Some of you might know pork cheeks are my absolute favorite piece of meat. For those who don’t know! Don’t worry. They know as much as you! There’s a new favorite in town! “Pluma Ibérico”. Have you ever heard of it? I had been searching […]
know you pitmasters love cooking on fire as much as I do. Yet when it comes to sides I often seem to grab at the same known recipes to serve along my grilled meat. Maybe you experience the same. This delicous “Ensalada de Garbanzos con Chorizo y Pimientos del Piquillo” made me realize I need to do more sides like these. They are easy to make and taste fantastic. I’m quite sure you’ll love it too!
We all got our favorite cuts of meat. If you ask me I’ll always go for the cheeks! Thinking about pork and beef cheeks. They are perfect for slow cooking projects. I had never thought about searching for venison cheeks before. Until Carmans delivered me […]
Chicken comes in many styles! There’s the legendary beercan chicken, you’ve got the delicious thighs, drums, … Many sauces, rubs and spices. But then you got the smokey Thai Roadkill chicken! Sweet, sour and spicy! The perfect combo… When roasted to perfection you’ll be able […]
There’s something beautiful about child memories! We had a lot of fun watching Tweety as a kid. Imagine what Sylvester would do if he finally managed to get the cute bird. I bet he would love to make these tweety wings. But once again he won’t get the chance to taste them! I bet you and the kids will eat them before the “Pussy Cat” gets the chance!
Best thing about summer are the BBQ and cocktail parties! When both come together it’s even better! But don’t bring yourself in a difficult position by serving loads of meat before you start the Main course! It’s a pitty if your guests are fullfilled when […]
Number 51 at the Chinese restaurant is an all time favorite over here! Over here it’s rarely cooked on the grill although it’s literally translated as roasted pork and usually made on the grill. So time for a BBQ Babi Panggang. An Indonesian pork roast […]
While sitting in France I’m writing down this recipe about Vietnamese Meatballs! The BBQ Bastard goes multicultural. The idea for this recipe came after a visit to the superb restaurant Bun! in Antwerp (Belgium). The meal we got served over there was awesome. I realised I needed to do more with those delicious oriental spices. So expect more of these delightful pieces of meat! There’s even a stir-fried side dish made on the Q coming soon so stay tuned!
