For many a terrifying piece of meat. Here at our house just a delicious snack that we all enjoy together. At least the men in this house, because although my lady eats them when served, they are not her favorite snack. Hence these “Rum Glazed Chicken Hearts” are an excellent snack for Halloween. Some guests will be put off by the idea, while others will enjoy these chicken hearts. I’ve grilled them on the BBQ in a cast iron skillet and glazed them with a bloody looking rum-based lacquer. To present these chicken hearts in between the decoration I’ve made an easy crumble made of Doritos.

Anyone who has been following the blog for a while, will undoubtedly have noticed that every once a while I collaborate with Bamix to develop a recipe that uses their famous hand blender and the accompanying tools. About 6 times a year I’m challenged to share a recipe within a certain theme with fellow bloggers Potimanon and Filetpur. This month we don’t have to look far for inspiration. The month could only lead to one theme: “Halloween”. As if by coincidence we launched a new contest on the “Belgian BBQ facebook group” to share some inspiration with each other. The first assignment was we launched also focussed on the Halloween theme. Those who wanted to join were challenged to cook with the mandatory ingredients rum and chicken. Although I was aware of this theme as a founder of the group, I guarantee you that I had no hand in the decision and only participated for the sports. Moreover I wasn’t able to join the contest since I had to withhold the recipe until it could be posted on the Bamix website.

The challenge was not easy. However, it was already clear from the beginning that I would go for chicken hearts to make this theme meal The “Rum glazed chicken hearts” that I originally had in mind were a mess. With a homemade BBQ sauce based on rum and beetroots I thought I could give the “Rum glazed chicken hearts” a nice bloody red color. Unfortunately…. The, by the way deliciously tasting, BBQ sauce became ugly brown looking after being blended. It didn’t remind me of blood at all. Dyes might have been a solution over here, but I don’t use food coloring in my food. Time for plan B … A new sauce based on ketchup, blueberry syrup and of course rum. The color is slightly better and the taste is certainly not less.
Since I was searching for a base to plant the chicken hearts in and these Rum glazed chicken hearts could use some extra bite, i’ve decided to make an easy crumble. Call it lazy or efficient, but for the crumble I just dived into the cupboard, pulled open a bag of nachos, threw some down my throut and added some more to the the bamix chopper to grind to a firm sandlike crumble. Result: a nice coarse crunchy base to plant the “Rum glazed chicken hearts” in. A crumble that sticks nicely in the lacquer of the hearts and thus provides some extra bite in this Halloween snack.

Rum Glazed Chicken hearts with Doritos Crumble
Ingredients
- 250 gr. Chicken hearts
- 2 tbsp rub
For the Crumble
- 1 handful Sweet Chili Doritos
- Bamix blender
For the rub
- 2 Tbsp Paprika Powder
- 2 Tbsp crystal sugar
- 1 Tbsp salt
- 1/2 Tbsp ginger powder
For the bloody BBQ Sauce
- 150 ml water
- 50 ml brown rum
- 50 gr. granulated sugar
- 3 Tbsp ketchup
- 2 tbsp blueberry syrup
- 1 tbsp cider vinegar
- juice of half a lime
- Firefly Reavers Carolina Reaper to taste
Instructions
- Mix the ingredients for the rub well and break any lumps with your fingers.
- Season the chicken hearts to taste with the spice rub.
- Prepare the BBQ for a high temperature session and preheat the skillet. Meanwhile you can make the sauce.
For the bloody sauce and crumble
- Add all the ingredients to a saucepan and let the sauce reduce to a syrupy texture. Taste and season with lime juice and cider vinegar.
- For the crumble: Place a handful of Doritos in the mincer and chop them finely until you get a coarse sandy texture (not fine otherwise it will lose its crispness). If you want to be playful you can add the Firefly Hot sauce to half of the sauce to make half of the chicken hearts extra spicy. This increases the tension among the daredevils. #russianroulette2.0
Finish chicken hearts.
- Fry the chicken hearts briefly and vigorously in the skillet until they are nicely colored.
- Add the sauce and caramelize the chicken hearts in the bloody sauce. As soon as the sauce sticks around the chicken hearts you can remove them from the BBQ. Stick some skewers through the hearts and place them in the Doritos crumble.
